Acidic notes describe a tart or sharp impression, such as the suggestion of sour citrus or tangy fruit. They can make a sweet fragrance feel less sugary or give a fruity composition a more pointed, mouth-watering character.

This is a sensory description rather than the name of one ingredient. Smelling something that suggests sourness is different from tasting an acid, and the term says nothing about a perfume’s pH. There is no universal acidic-note extract or production method. Look at the surrounding notes to understand whether the fragrance leans towards citrus peel, tart fruit or another sharp effect.
