COCOA
Cocoa brings a chocolate-like richness that can be drier and less sugary than a dessert accord. Think of unsweetened dark chocolate or cocoa powder, with a bitter edge and sometimes a faint spicy undertone. These facets can give a gourmand composition contrast, rather than simply adding more sweetness. The surrounding notes determine whether the impression feels dry, creamy or more confectionery-like.
Natural perfumery materials include extracts from the seeds of Theobroma cacao. Cocoa absolute can be made using solvent extraction of roasted, defatted cocoa material; processed extracts with a cocoa-powder effect are also available. The aromatic extract is different from cocoa butter, the fat separated during processing. A cocoa note does not specify one extraction method or prove that a natural cocoa ingredient is present in every fragrance.
