COUMARIN
Coumarin smells sweet and powdery, with a hay-like character that can move towards almond, tonka bean and soft vanilla-like warmth. Its appeal lies in that balance: a dried-herb impression alongside a more rounded sweetness. In a perfume it can reinforce an aromatic fougère theme or give an amber or gourmand composition a fuller, gently powdery texture. The surrounding materials determine which side is most noticeable.
Coumarin is a specific aroma molecule found naturally in tonka beans and also produced synthetically for perfumery. It is not the same material as tonka bean absolute, which contains a wider mixture of aromatic compounds. Nor is it simply another name for vanilla. Those related scent impressions can overlap in a fragrance while retaining their own character.
