DEMERARA SUGAR

Demerara sugar suggests a caramel-toned sweetness in perfume, drawing on the culinary character of the sugar. Billington’s describes its Demerara as unrefined cane sugar with a deep caramel flavour. As a fragrance reference, that offers a warmer, brown-sugar image rather than a purely abstract sweet note.

The perfume house New Notes uses Demerara sugar alongside sandalwood, vanilla and other woods, illustrating how the theme can add gourmand softness within a woody composition. It need not turn the whole fragrance into a dessert: the balance with wood, musk or spice determines its prominence. The note is an aromatic impression, not a declared quantity of sugar crystals.
