LEMON ZEST

Lemon zest evokes the concentrated citrus impression of freshly grated outer rind. The scent can feel sharp and clear, with enough juicy sweetness to keep the lemon from seeming entirely sour. In a fragrance, this detail can suggest a garnish of fresh citrus over flowers, herbs or a sweeter composition. Zest and lemon peel are closely related descriptions; the wording highlights an aspect of the fruit rather than defining two separate fragrance ingredients.

The coloured outer rind contains the aromatic oil associated with lemon zest, above the white inner pith. Natural lemon essential oil is commonly recovered from Citrus limon peel by cold pressing. In perfume, a zest effect may be shaped with that oil and other materials, so its freshness, sweetness and prominence depend on the whole blend.
