LEVISTAMEL
Levistamel has a caramel-like sweetness with liquorice and warm balsamic facets. Its character can also turn towards celery and fenugreek, giving the sweetness a savoury, herbal edge. This makes it more complex than a straightforward honey or vanilla impression. In perfume, it may enrich a gourmand theme with a cooked-sugar effect or introduce an unexpected warm accent into herbs and coniferous notes, depending on how it is blended.
Levistamel is an aroma material associated with Givaudan, whose catalogue includes a 25% dilution in triethyl citrate. It belongs to the lactone family of aroma chemicals; the name does not mean an extract of honey or lovage. The balance between caramel sweetness and herbal character is shaped by dosage and the surrounding formula. Its presence in a note list cannot establish how sweet the entire fragrance will smell or how long it will last.
