LIME

Lime brings a juicy, zesty citrus impression with a sweet-tart edge. Herbal nuances can give the fruit a greener outline, while some interpretations suggest citrus sweets rather than freshly cut peel. That range makes lime useful for both crisp fruit effects and softer citrus accents around flowers or spices. Its brightness describes a smell, not a guaranteed change in mood or energy.

Natural lime oils come from more than one citrus type and more than one process. Cold-pressed Persian lime oil, from Citrus latifolia peel, can retain a fresh, juicy character. Distilled Key lime oil, from Citrus aurantifolia fruit, offers another expression, with sweet and herbal facets. These are examples, not fixed opposites.
