MIMOSA (AUSTRALIA)

Mimosa has a powdery floral character with a soft honeyed sweetness. It can also show almond-like warmth, a green leaf edge or a gently spicy facet. The powdery effect suggests a soft, dry texture rather than a sharp, watery flower; the greener side can keep that sweetness from feeling one-dimensional.

The Australia designation recalls the native home of acacias such as Acacia dealbata, or silver wattle, found in New South Wales, Victoria and Tasmania. Its yellow flower clusters appear from late winter into spring. The country label does not establish a uniquely greener or less powdery scent than French mimosa, nor does it identify a particular Australian extract.
