SAKE

Sake in perfume evokes the Japanese fermented-rice drink, with room for more than one interpretation. A composition may suggest light fruit, soft grain sweetness and a creamy texture, while a richer treatment can draw on nutty or roasted impressions. Sake itself spans fruity and floral styles through to fuller, aged aromas, so the note need not smell sharply alcoholic or uniformly watery.

Perfumers can build a sake-inspired accord, and extracts from sake lees have also been used in fragrance. These brewing residues provide one route to the theme, rather than a recipe shared by every perfume. Look for the balance between fresh fruit and mellow rice-like warmth: it can make the note feel airy, rounded or gently savoury depending on the surrounding composition.
