SOUR CHERRY

Sour cherry brings a juicy cherry impression with a tangy edge against its sweetness. It can make a fruity composition feel brighter and less syrupy, although the surrounding materials may also steer it towards preserves or cherry liqueur. An almond-like accent can accompany the fruit, but it is not a requirement of every sour-cherry note.

The name refers to the fruit associated with Prunus cerasus, distinct from sweet cherries derived from Prunus avium. In a fragrance, it describes the fruit impression rather than proving that cherry juice or a natural fruit extract is present. Afnan, for example, lists sour cherry alongside almond and cherry liqueur in Cherry Bouquet, with flowers and woods elsewhere in the composition. Such combinations illustrate possibilities, not a fixed recipe or a promise of how the note will develop on skin.
