VANILLA
Vanilla has a soft sweetness that can suggest cream, warm desserts and the aroma of cured pods. Natural extracts can also reveal woody, balsamic or spicy aspects, so vanilla need not be only sugary. It can soften a floral bouquet or contribute warmth to a richer amber or gourmand arrangement, depending on the composition.
Vanilla comes from the fruit of an orchid. Drying and curing the pods develop the familiar aroma; perfumers can use materials such as vanilla absolute or CO₂ extracts to work with that scent. These extracts contain more than vanillin, the molecule strongly associated with vanilla. A perfume may also build a vanilla impression using aroma chemicals, or combine them with natural extracts. The note name describes the effect, not a guarantee of pod extract, one orchid species or a particular country of origin.
