VANILLIN (VANILLA NOTE)

Vanillin is an aroma molecule with a recognisably sweet, creamy vanilla smell. It is a major contributor to the familiar character of cured vanilla pods, but it is not the whole scent of a vanilla extract. Natural pod materials contain other aromatic components, which help explain why they can show additional spicy, woody or balsamic facets.

Vanillin occurs in vanilla and is also manufactured for flavouring and perfumery; calling it exclusively synthetic would be misleading. Suppliers offer different production routes and grades. In a composition, it can underline a vanilla impression, round out a gourmand accord or soften the setting around flowers and woods. Its effect depends on the amount used and the surrounding materials. A vanillin note tells you about an olfactory direction, without specifying a complete formula, a pod origin or guaranteed lasting power.
